四「不」要訣煮出正宗麻油雞

簡介

正宗的麻油雞是滴水不沾/不調味/不蓋鍋蓋/雞肉不汆燙,

煮出來的才是好味道,且湯汁也不會混濁喔!

食材
土雞肉半隻
麻油100ml
老薑1塊(切片)
米酒2瓶(1200ml)

作法

雞肉剁小塊(可請攤販剁好),老薑洗淨切片。

熱油鍋,加入麻油爆香薑片。

轉大火放入剁好的雞肉炒至肉變白。

加入米酒煮滾後,轉中小火燉煮約15分鐘(不蓋鍋蓋),即完成。
